Kumara and Bacon Soup

Kumara & Bacon Soup is simple, delicious, and ideal for warming up during winter. It's perfect for a dinner or as a lunch to bring to work.


Ingredients

6 large kumara roughly chopped into 2cm pieces

1 brown onion roughly chopped

4 cloves garlic, roughly chopped

250g streaky bacon, roughly chopped

2 Litres chicken stock or enough to cover kumara


Method

  1. Heat a large saucepan, pan fry onion and bacon in olive oil until the bacon changes colour, add garlic and kumara.

  2. Fill saucepan with stock, cover and cook for 25 minutes, until the kumara is soft and tender, then puree with a stick blender.

  3. Taste and season with salt and pepper.
