Roasted Yellow Capsicum Pasta

Blended Capsicum sauce for your choice of pasta


Ingredients

  • 2 yellow capsicums

  • 3 garlic cloves, peeled

  • 1 small onion

  • ¼ cup oil

  • 1 tbsp. apple cider vinegar

  • ½ tsp. dried thyme

  • ½ tsp. dried chili flakes

  • Salt and pepper, to taste

  • Packet pasta of your choice


Instructions

  1. Turn your ovens grill (top element of oven on) on high and lightly grease a baking tray. Half your capsicums and remove the seeds, before placing them on the baking tray. Halve the onion and place garlic, onion and capsicums on the baking sheet together, and drizzle lightly with oil.

  2. Place the baking sheet with the vegetables under the grill and cook for about 10 minutes, until the peppers have a little charring and have softened. Remove from the oven and allow to cool until they are able to be handled.

  3. Prepare the pasta according to packet directions.

  4. Transfer the vegetables to a food processor or blender, along with the oil, vinegar, thyme, and chili flakes. Blend until smooth. Season with salt and pepper, to taste.

  5. To serve, toss freshly cooked pasta in your yellow capsicum sauce.
