Silverbeet and Cheese Quiche

This versatile crustless quiche recipe is a great way to use up any leftover veges.
Ingredients:
8 large silverbeet leaves
1 onion, diced
2 cloves of garlic
250 grams of tasty cheese
1 cup of milk
3 eggs
½ cup flour
1 teaspoon baking powder
Method:
Preheat the oven to 220 °C. Use a pastry brush to coat the quiche dish with olive oil.
Wash the silverbeet and pat it dry. Remove the central stem from each leaf and dice it. Then, fold the leaves in half and slice them finely across.
Heat 2 teaspoons of olive oil in a frying pan over medium heat and sauté the garlic, onion, and silverbeet stems until the onion becomes soft and translucent.
Grate the cheese.
Crack the eggs into a large mixing bowl, add the milk, and whisk together.
Add the flour and baking powder, and continue mixing until all ingredients are well combined.
Fold in the chopped silverbeet, onion mixture, and grated cheese.
Spoon the mixture into the prepared dish.
Bake for 30 minutes until golden brown and the egg has set. Let it cool for a few minutes before serving.
