Bok Choy Stir-fry

Bok choy, also known as Chinese cabbage or pak choi, is packed with vitamins and is a great addition to a healthy diet.


Ingredients:

  • 3-4 shanghai bok choy (or baby bok choy)

  • 2 cloves garlic (minced)

  • 1 tablespoon cooking oil

  • 1 tablespoon soy sauce


Method:

  1. Wash the bok choy and remove the base of the stem.

  2. Heat up a large pan over medium heat. Add 1 tablespoon of oil when the pan is hot and swirl around. Add minced garlic and cook for 30 seconds.

  3. Add all of the bok choy and quickly stir to coat all leaves with oil. Once the bok choy has started to shrink in size, add soy sauce and cook covered for 5 minutes.

  4. Remove lid and cook for an additional 2 minutes, until liquid has mostly evaporated from the pan. Enjoy!
