Smoky Bacon & Chive Mashed Potato Cakes

Great for lunch on a cold winter day, these potato cakes utilise the spuds from todays vege bag and the bacon from the meat pack.
Ingredients:
2 cups mashed potatoes (leftover works great!)
4 strips bacon, cooked and crumbled
1/4 cup fresh chives, chopped
1/2 cup shredded cheddar cheese
1/4 cup all-purpose flour
1 egg, beaten
Salt and pepper, to taste
2 tbsp olive oil (for frying)
Method:
In a large bowl, combine mashed potatoes, crumbled bacon, chopped chives, cheddar cheese, flour, and the beaten egg. Season with salt and pepper to taste.
Form the potato mixture into small patties, about 2-3 inches wide.
Heat olive oil in a large skillet over medium heat.
Fry the potato cakes in batches, cooking each side for 3-4 minutes or until golden brown and crispy.
Remove the cakes from the skillet and place them on a paper towel-lined plate to drain excess oil.
