Leek and Potato Soup

A comforting and warming soup crafted from leeks, potatoes, onions, chicken stock, and cream, accompanied by DIY croutons.
Ingredients:
1 large leek
1 onion, diced
1kg potatoes, peeled and chopped
1 teaspoon minced garlic
1.25L chicken stock
250ml cream
Salt and pepper
Croutons
Stale white bread
Oil
Salt
Instructions
Wash and then slice the leek in half longways.
Disgarged the dark green tops, and dice the rest.
In a large soup pot, fry the leek, garlic and diced onion wth a bit of oil for about 5 minutes.
Add all the stock and bring to the boil, lower the heat and simmer for 30 minutes.
Remove soup from the heat, and add the cream. Use a stick blender to blend until smooth.
Season with salt and pepper to taste.
Serve with croutons.
Croutons: Slice stale bread into 1cm cubes, and arrange on baking tray. Drizzle with oil and a sprinkle of salt. Bake until crispy, tossing/stirring occassionally.
