Mandarin Orange salad

An almost anything goes salad, add or substitute what you like.


Ingredients:


For the Orange Dressing


¼ cup squeezed orange juice/mandarin juice

½-1 teaspoon orange zest

¼ cup olive oil

1 teaspoon Dijon mustard

2 teaspoons honey

2 tablespoons apple cider vinegar

½ teaspoon salt

¼ teaspoon black pepper

1 small clove of garlic minced or grated


For the Salad


1 bag of salad greens

OR any salad leaves such as lettuce, baby spinach etc.

¼ cup of pumpkin seeds

4 mandarins, peeled and separated into sections

OR 2 oranges, peeled and cut into 2cm segments

1 avocados, peeled pitted and diced

½ cup dried cranberries or raisins

½ cup crumbled feta

OR 50g halloumi, sliced and pan fried

¼ red onion, sliced


Optional additions or substitutions:

3 - 4 Carrots, diced and roasted (30-40mins in 200 degrees Celsius oven, with salt and oil), or any roast vegetable

Any preferred nuts

Fresh tomato, diced

Cucumber, diced

Alternative for dressing: ¼ - ½ cup mayonnaise, drizzle of sesame oil, ¼ squeezed orange or mandarin juice, pinch of salt and pepper


Method:


  1. Combine all orange dressing ingredients. Set aside.

  2. Combine all salad ingredients. Substitute or add any ingredients to suit your preference.

  3. Enjoy!
