Roast Vege Salad

Clean out the fridge and make a hearty winter salad at the same time.


Ingredients:

  • 4 cups of chopped winter vegetables (we use kumara, capsicum, carrot, onion and sometimes potato)

  • A big splash of oil of your choice (we use rice bran or olive oil)

  • A generous sprinkle of herbs

  • Salt and pepper


Salad:

  • 1 bag of Spinach

  • Feta cheese

  • Dressing of your choice: Balsamic or garlic aioli work well


Method:

  • Preheat your oven to 180°C

  • Peel your root veges, and then dice everything

  • Place the chopped veges on a lined baking tray and drizzle with oil, herbs and salt/pepper

  • Stir with a wooden spoon to distribute the oil and seasonings

  • Cook until done.


Place your spinach on platter and top with the veges then the feta

Cover with a drizzle of your dressing of choice.
