Roast Vege Salad

Clean out the fridge and make a hearty winter salad at the same time.
Ingredients:
4 cups of chopped winter vegetables (we use kumara, capsicum, carrot, onion and sometimes potato)
A big splash of oil of your choice (we use rice bran or olive oil)
A generous sprinkle of herbs
Salt and pepper
Salad:
1 bag of Spinach
Feta cheese
Dressing of your choice: Balsamic or garlic aioli work well
Method:
Preheat your oven to 180°C
Peel your root veges, and then dice everything
Place the chopped veges on a lined baking tray and drizzle with oil, herbs and salt/pepper
Stir with a wooden spoon to distribute the oil and seasonings
Cook until done.
Place your spinach on platter and top with the veges then the feta
Cover with a drizzle of your dressing of choice.
