Garlic and Cauliflower Soup

Utilize cauliflower in this delicious and straightforward soup for a satisfying meal.


Ingredients:

1 onion, finely diced

1-2 teaspoons of crushed garlic (more or less depending on how much you like garlic)

1 head of cauliflower, cut into florets

1 litre of vegetable stock

2 cups of grated cheddar cheese

1 cup of milk or cream

Salt and pepper to taste



Method:

  • Fry the onion until translucent

  • Add in the garlic and fry until lightly browned

  • Add in the cauliflower and the stock, and simmer until the cauliflower is cooked, mash with a potato masher.

  • Let cool a bit then blend until smooth

  • Add soup back to the pot and add in the cheese and milk/cream.

  • Simmer gently until the cheese is melted through.

  • Add salt and pepper to taste.
