Utilize cauliflower in this delicious and straightforward soup for a satisfying meal.
Ingredients:
1 onion, finely diced
1-2 teaspoons of crushed garlic (more or less depending on how much you like garlic)
1 head of cauliflower, cut into florets
1 litre of vegetable stock
2 cups of grated cheddar cheese
1 cup of milk or cream
Salt and pepper to taste
Method:
Fry the onion until translucent
Add in the garlic and fry until lightly browned
Add in the cauliflower and the stock, and simmer until the cauliflower is cooked, mash with a potato masher.
Let cool a bit then blend until smooth
Add soup back to the pot and add in the cheese and milk/cream.
Simmer gently until the cheese is melted through.
Add salt and pepper to taste.
