A humble quiche is a quick and easy way to use up left-over vegetables! Pair it with a loaf of crusty bread and a green salad for a wholesome lunch.
Serves 4 - 6
Ingredients:
1 1⁄4 cups milk
1⁄2 cup self raising flour
3 medium eggs
1 cup grated cheese
1 cup bacon, chopped (replace with more veges if you prefer a vegetarian dish)
1 1⁄2 cups vegetables, chopped or diced
1 onion, finely chopped
Method:
Preheat oven to 165°C bake
In a frypan, brown the onion and any of the firmer vegetables
Mix the milk, flour and eggs together in a large bowl, and whisk until smooth
Add all the other ingredients into the mix
Grease a quiche dish with oil – and pour in the mixture
Bake in a pre-heated oven at 165°C for 45 minutes, or until browned on top
Remove from the oven and leave to cool for 5 minutes.
