Self-crusting Quiche

A humble quiche is a quick and easy way to use up left-over vegetables! Pair it with a loaf of crusty bread and a green salad for a wholesome lunch.


Serves 4 - 6


Ingredients:

  • 1 1⁄4 cups milk

  • 1⁄2 cup self raising flour

  • 3 medium eggs

  • 1 cup grated cheese

  • 1 cup bacon, chopped (replace with more veges if you prefer a vegetarian dish)

  • 1 1⁄2 cups vegetables, chopped or diced

  • 1 onion, finely chopped


Method:

  • Preheat oven to 165°C bake

  • In a frypan, brown the onion and any of the firmer vegetables

  • Mix the milk, flour and eggs together in a large bowl, and whisk until smooth

  • Add all the other ingredients into the mix

  • Grease a quiche dish with oil – and pour in the mixture

  • Bake in a pre-heated oven at 165°C for 45 minutes, or until browned on top

  • Remove from the oven and leave to cool for 5 minutes.
